Let’s talk about some healthy carbs & why they’re good for your body. These are just ones I eat all the time, so, it’s not everything. Which is good. On your health journey, you’ll want to always research healthier foods. Also, here’s a cauliflower tortilla recipe~
I’ve been experimenting in the kitchen lately and tried a recipe by @KirbiesCravings on YouTube for a great way to enjoy tacos and wraps using cauliflower. I even added a touch of honey for a subtle sweetness that complements both savory and sweet fillings.
Cauliflower Tortilla Recipe (Makes 3–4)
Ingredients:
• 1.5 cups riced cauliflower
• 1 large egg
• 2 tbsp shredded cheese (optional, for flexibility)
• ½ to 1 tsp honey
• ⅛ tsp salt
• ⅛ tsp garlic powder (optional)
• ⅛ tsp black pepper (optional)
Instructions:
1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Roast the Cauliflower for about 15min after cutting off the stems and separating.
2. Rice the cauliflower using a food processor or grater.
3. Mix the cauliflower with the egg, cheese, honey, salt, and seasonings (I add creole seasoning) until combined.
4. Shape the mixture into 3 or 4 small tortillas spreading them thinly to bake. I used aluminum foil and some butter because I didn’t want to buy baking sheets. But that’ll make this a bit easier.
5. Bake for 10 minutes, carefully flip, and then bake for another 5–7 minutes until the tortillas turn a light golden brown. I only tore 1 a little but the rest came out fine. I also seared them a little
6. Let them cool a few minutes before adding your favorite toppings.
In the picture, I topped mine with some grilled steak, lettuce, shredded carrots, and a light sauce. The result was a satisfying meal that feels fresh and homemade. Delicious for only 480 calories! For a quick lunch that’s pretty good.

Over time, I’ve come to appreciate the benefits of swapping refined carbs for whole, nutrient-dense alternatives. Instead of reaching for bread or traditional flour tortillas, I lean toward healthier choices like:
• Sweet Potatoes: Packed with fiber and vitamin A, they’re a reliable source of energy.
• Quinoa: A complete protein rich in minerals, perfect as a base for many meals.
• Brown Rice: Offers more fiber than white rice, keeping me full longer.
• Lentils and Beans: These are fantastic for both protein and fiber, contributing to overall gut health.
• Oats: Great for a slow-release energy boost.
• Fruits and Vegetables: Fresh produce like bananas, berries, and carrots provide natural, unprocessed carbs that nourish the body.
I believe that by choosing these wholesome alternatives, we not only support our health but also enjoy a greater variety of flavors and textures in our meals. The key is to just use them as replacements and find ways to make them closer to what you’re replacing.
