Ingredients
1 lb frozen okra
1 can rotel tomato’s
1 can stewed tomatoes (drained)
1 green bell pepper
1/2 onion
1 lb shrimp
1 box chicken stock
1 lb smoked sausage
3 tbs olive oil
1 tbs white vinegar
Cajun seasoned
Italian seasoning
Directions
1. Cut sausage into halves and dice onions and bell peppers. Set aside.
2. Drizzle olive oil in pan as well as smoked sausage and cook until golden brown. Remove from pan and set aside.
3. Without cleaning the pot, turn the heat up to high and cook your frozen okra. Add vinegar to cut down on slime and cook on high heat until a light brown color.
4. Once okra is browned, add bell peppers, onions and garlic.
5. Place cooked smoked sausages back into pot add chicken stock, rotel tomatoes, stewed tomatoes and seasonings and stir until well combined.
6. Simmer on medium heat until sauce has thickened (this took around 40 minutes for me). If sauce doesn’t thicken to liking combine 2 tbs of cornstarch and 2 tbs of water to create a cornstarch slurry and pour into pot to thicken.
7. Add in shrimp and allow to simmer until cooked.
8. Spoon over a bed of rice and serve with a slice of cornbread and you’re done 🤌🏾
