First off, let’s talk about the stars of the show. Sardines are tiny powerhouses! They're loaded with Omega-3 fatty acids, which are fantastic for brain health and reducing inflammation. Plus, they're a great source of Vitamin D and calcium, especially if you eat the bones (don't worry, they're super soft!). Pairing them with two eggs, which offer complete protein and essential vitamins, creates a meal that keeps you full and energized for hours. No more mid-morning slumps! Now, for the scrambled eggs themselves. While my initial recipe just mentions '2 eggs,' getting them just right makes all the difference. My secret for fluffy, delicious scrambled eggs? A splash of milk or cream (or even water!) whisked in before cooking, and cooking them low and slow. Don't overcook them! You want them soft and creamy, not rubbery.
