Chicken bowl

This is so easy and versatile to make and is one of my favorite dinner staples! It is also so high in protein and filled with so many whole foods to make you feel good!

What you need:

-chicken breast

-arugula

-sweet potato

-rice

-tomato

-mini persian cucumber

-mini bell pepper

-red onion

-cauliflower

-avocado

-feta cheese

Dressing:

-Greek yogurt

-lemon

-dill

-garlic salt

How to make:

-Use a meat tenderizer to get your chicken breast thin and evenly thick throughout. Then season your chicken generously with paprika, salt, garlic powder, and pepper. Place your chicken in a pan on medium heat with hot olive oil. I like to place a lemon wedge and a few tablespoons of lemon juice in the pan and let cook for 6 minutes on each side.

-In a bowl season your cauliflower and sweet potato with olive oil, salt, garlic powder, and smoked paprika. Cook in air fryer or oven at 350 for 10 mins or until the cauliflower is crispy and sweet potato is fork tender.

-Dice the red onion, tomato, cucumber and bell peppers and add to a bowl with lemon juice. Season with garlic powder, onion powder, and salt.

-Assemble the bowl with arugula, rice, thinly sliced cooked chicken, chopped vegetables, cauliflower and sweet potato. Top with feta cheese, avocado, and the taziki dressing.

Taziki Dressing

-3 tbs Greek yogurt

-Finely chopped dill

-Finely diced cucumber

-lemon juice

-garlic powder
