these chicken tacos were SO good 👏🏾 10/10 🙌🏾😋
here’s how I made them:
WHAT YOU NEED:
2-3 @Perdue Chicken breasts, cleaned and diced into large chunks
1 tablespoon oil of choice
Sauce pan or broiler pot for cooking, I used 2QT @GoodCook Healthy Ceramic Sauce pan
2 tablespoons minced garlic
1 @EZ Bombs Tinga bomb
1 can @La Costeña MX
Chipotle Peppers in adobo sauce
Immersion blender (or blender of your choice)
8oz Colby jack cheese block
8oz Mozzarella cheese block
@Mission Foods Street tacos tortillas
OPTIONAL: taco toppings & sides of your choice! I served ours with @knorr rice & @Old El Paso refried beans
HOW TO MAKE IT:
**PREP BEFORE COOKING: Clean and dice chicken breasts, blend chipotle peppers until smooth, grate cheese of choice, set aside 2 cups of water
1. In a saucepan, add oil let warm
2. Saute garlic in sauce pan until fragrant
3. Add clean, diced chicken breasts into pan - let cook on medium heat for a 3-4 min
4. Add 1 tablespoon chipotle peppers into pan on top of chicken breasts, mix well, cook for 2 min (CAUTION WHEN ADDING PEPPERS, very spicy!)
5. Add 2 cups water
6. Add in 1 EZ BOMBS Tinga bomb
7. Allow everything to boil for about 10min on Medium heat. After 10 min, check chicken. Make sure chicken is cooked completely before next step.
8. Remove chicken from pan and shred
9. Add chicken back to sauce pan and turn off heat, remove from eye and let the flavors settle in together **OPTIONAL: Drain your chicken before assembling tacos to avoid too much liquid)
10. Assemble tacos with cheese, chicken (be careful of adding too much liquid from pan)
11. Fry on medium to low heat for 3-6min on each side until desired level of crisp
12. Let cool, and enjoy!
