A lot of my measurements are done to taste depending on how many I'm cooking for. I typically do this for 4 - 6 people, but I have made it for as many as 50 at a family reunion. You can't really mess it up.
The following instructions should feed 4-6 hungry people:
(2-3 lbs salmon) Marinate your salmon in Olive oil, a tiny bit of soy sauce, fresh lemon juice (lots), Lemon pepper, salt pepper, and granulated garlic etc. - Marinate for at least a couple hours. Bake Salmon until the meat flakes . Let cool and shred.
In a sauce pan saute 1/2 a chopped onion, 2 tsp (or more) minced garlic and olive oil until onions are transparent. Add one pint of whipping cream. Keep on Medium/High heat and stir for around 8-10 minutes. Add a few pinches of salt and a couple pinches of sugar. Pepper too. Take off heat . Add at least 1 TBLS of Lemon Juice and at least 1 TBLS of Lime Juice and as much cilantro as you like. Let cool. ( I actually sometimes make it ahead of time and stick it in the fridge to thicken. If it gets too thick in the fridge just microwave it for a few seconds and it will thin back out)
Serve meat and tortillas with shredded cabbage ,( red and/or green) cilantro, limes and the sauce above.
I usually use corn tortillas but you can try whatever you like.
