Braised pork rice with kimchi
Braised pork belly comes in different tastes. I don’t have a particular secret sauce. I’ll just mix whatever I can find in my fridge. Braising pork belly is always forgiving, difficult not to be tasty.
For this braised sauce;
3 tsp miso paste
3 tsp oyster sauce
3 tsp soya sauce
1 tsp instant coffee granules (mine’s decaffeinated)
3 tsp mirin
A splash of cooking wine (except for red)
Pepper
1/2 pc of onion
3 - 4 garlic with skin
2 pc Scallions
1 inch of ginger with skin smashed
I used pressure cooker to cook for 30 minutes.
Under $20 homecooked meal for 3 pax
Braised pork rice is a comforting dish that balances rich, savory flavors with the tangy zest of kimchi. In my experience, the secret to a deeply flavorful braised pork belly lies in layering umami-rich ingredients like miso paste and oyster sauce, complemented by a hint of coffee granules which adds subtle depth and complexity. Using a pressure cooker not only speeds up the cooking process but also results in tender, melt-in-your-mouth pork belly in just about 30 minutes. When choosing kimchi to accompany the dish, I prefer authentic fermented varieties like those from Korean brands, which add a refreshing and slightly spicy contrast to the fatty pork. The probiotics in kimchi also contribute positively to digestion, making this meal both tasty and beneficial. For home cooks looking to experiment, you can adjust the braising sauce by adding a little bit of brown sugar for sweetness or a splash of chili oil for heat. Fresh aromatics like smashed ginger, scallions, and whole garlic cloves build a fragrant base that infuses the pork as it braises. Pairing the braised pork and kimchi over steamed rice ensures a balanced and satisfying meal. This recipe proves you don’t need complicated tricks or expensive ingredients to create a restaurant-quality dish at home. It’s versatile, forgiving, and perfect for meal prepping leftovers that taste even better the next day. Whether you’re new to Asian-style braising or a seasoned cook, this straightforward approach makes cooking braised pork rice approachable and enjoyable.
