... Read moreSesame balls, known as 'Jian Dui' in Chinese cuisine or 'Khanom Kai Nok Krata' in Thai cuisine, are popular glutinous rice flour snacks characterized by their crispy, golden exterior coated with sesame seeds and a chewy texture inside. The sweet pumpkin filling in this recipe is enhanced by palm sugar, coconut milk, and steamed pumpkin, creating a creamy, aromatic center that balances the nuttiness of the sesame coating. To prepare the dough, glutinous rice flour is mixed with baking powder, sugar, salt, hot water, and a bit of oil to provide elasticity and softness after frying. It's important to use hot water mixed gradually to form a smooth, pliable dough that won’t crack during frying. Palm sugar adds a rich caramel-like flavor that harmonizes beautifully with the natural sweetness of steamed pumpkin. Combining the filling ingredients and adjusting water ensures the filling stays soft but firm enough to hold its shape inside the dough. Sesame seeds can be used as a combination of black and white or just white, depending on preference. The coated balls are deep-fried until golden and crispy outside, resulting in a delightful contrast of textures. This snack is not only a treat for special occasions but also commonly enjoyed as an afternoon snack or breakfast alongside coffee or tea. Its flavors and textures make it a popular choice among lovers of Thai or Asian desserts. For those interested in Thai food or unique sesame ball recipes, this sweet pumpkin-filled version offers a delicious twist on traditional sesame balls. Incorporating natural ingredients like coconut milk and palm sugar not only enhances taste but also adds nutritional benefits such as vitamins A and C from pumpkin and healthy fats from coconut milk. Remember to adjust ingredient quantities when cooking for desired consistency and sweetness. This recipe showcases an authentic and appetizing way to enjoy a beloved snack with a seasonal pumpkin twist.
