🧀 Cheesy Chicken Enchiladas with Creamy Sauce 🌮

For the Enchiladas:

🐔 2 cups cooked shredded chicken (rotisserie chicken works great)

🌶️ 1 can (4 oz) diced green chiles

🌿 1 tsp ground cumin

🧂 Salt and pepper to taste

🌮 8-10 flour tortillas

🧀 2 cups shredded Mexican cheese blend (or cheddar cheese)

For the Creamy Sauce:

🧈 2 tbsp butter

🧄 2 cloves garlic, minced

🥄 2 tbsp all-purpose flour

🥫 1 1/2 cups chicken broth

🍶 1 cup sour cream (or Greek yogurt for a lighter option)

🌶️ 1/2 cup green enchilada sauce (optional, for extra flavor)

🧀 1 cup shredded Monterey Jack cheese

🌿 Chopped cilantro for garnish (optional)

Instructions:

Prepare the Filling:

In a bowl, combine shredded chicken, green chiles, cumin, and salt and pepper. Stir to mix well.

Assemble the Enchiladas:

Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish.

Place a scoop of the chicken mixture in the center of each tortilla, sprinkle with a little shredded cheese, then roll up tightly.

Arrange the rolled tortillas seam-side down in the prepared baking dish.

Make the Creamy Sauce:

In a medium saucepan, melt the butter over medium heat. Add the garlic and cook until fragrant, about 1 minute.

Whisk in the flour and cook for 1 minute to make a roux.

Slowly whisk in the chicken broth until smooth. Continue to cook, stirring constantly, until the mixture thickens slightly, about 3-4 minutes.

Reduce the heat to low, and stir in the sour cream, green enchilada sauce (if using), and Monterey Jack cheese until melted and smooth. Season with salt and pepper to taste.

Assemble and Bake:

Pour the creamy sauce evenly over the enchiladas in the baking dish.

Sprinkle the remaining shredded cheese on top.

Bake for 20-25 minutes, or until the cheese is melted and bubbly.

... Read moreYou know that feeling when you pull something amazing out of the oven, and it's just bubbling with cheesy goodness? That's exactly how I feel every time I make these Cheesy Chicken Enchiladas! I've tried so many recipes, and this one truly hits different. It’s not just about the flavor, which is absolutely divine, but also how comforting and visually appealing it is, especially when you get that perfect close-up shot of the melted cheese and creamy white sauce. One of my secret weapons for achieving that irresistible melted cheese top, just like in the pictures, is to use a good quality Mexican blend or a mix of Monterey Jack and cheddar. Monterey Jack melts beautifully and gives you that stretchy, gooey texture everyone loves. Don't be shy with the cheese! I always sprinkle a generous layer on top before baking. For a truly 'gratinadas' effect – that lovely browned, bubbly crust – you can pop it under the broiler for a minute or two at the very end, but keep a close eye on it so it doesn't burn! And let's talk about that creamy sauce. It’s what makes these enchiladas so incredibly moist and flavorful. I've found that whisking in the chicken broth slowly and ensuring you cook out the flour taste in the roux is key to a smooth, lump-free sauce. If you want to lighten it up a bit, Greek yogurt works wonderfully in place of sour cream, and honestly, you might not even notice the difference! For an extra layer of flavor and a beautiful color, that ½ cup of green enchilada sauce in the creamy mixture is a game-changer. It really elevates the whole dish. I love to serve these enchiladas with some fresh garnishes to brighten everything up. A sprinkle of fresh cilantro is a must for me, but adding some diced red onions and diced tomatoes, just like you see in those mouth-watering close-up photos, really adds a pop of color and freshness. A dollop of extra sour cream or a side of avocado slices never hurts either! If you're thinking about making these for a crowd or meal prepping, they are fantastic! You can assemble the enchiladas, pour the sauce over them, cover them tightly, and refrigerate for up to 24 hours before baking. Just add an extra 10-15 minutes to the baking time if baking from cold. Reheating leftovers is also a breeze; I usually cover them loosely with foil and bake at 300°F (150°C) until heated through, or microwave individual portions. They taste just as good the next day! Trust me, once you try this recipe, it'll become a staple in your kitchen.
