Shrimp and Grits 🍤

Ingredients 🍽️:

**For the Grits:**

- 1 cup stone-ground grits

- 4 cups water or chicken broth

- ½ cup heavy cream

- 2 tbsp butter 🧈

- Salt to taste

**For the Shrimp:**

- 1 lb large shrimp (peeled and deveined) 🍤

- 4 slices bacon (chopped) 🥓

- 2 garlic cloves (minced) 🧄

- 1 small onion (diced)

- 1 bell pepper (diced)

- ½ cup chicken broth

- 1 tsp Cajun seasoning

- 1 tbsp lemon juice 🍋

- 2 tbsp parsley (chopped)

Directions 👩‍🍳:

1. **Prepare the Grits:**

- Bring water or chicken broth to a boil in a medium pot. Slowly whisk in the grits.

- Reduce heat to low and simmer, stirring occasionally, for about 20 minutes until thick and creamy.

- Stir in heavy cream, butter, and salt. Keep warm.

2. **Prepare the Shrimp:**

- In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the skillet.

- Add the shrimp to the skillet, season with Cajun seasoning, and cook for 2-3 minutes per side until pink and cooked through. Remove and set aside.

- In the same skillet, sauté the garlic, onion, and bell pepper until softened. Deglaze with chicken broth and stir in lemon juice. Let it simmer for 2-3 minutes.

- Return the shrimp and bacon to the skillet, tossing to coat in the sauce.

3. **Assemble:**

- Spoon the grits into bowls and top with the shrimp mixture. Garnish with parsley and serve immediately.
