Chocolate Ombre Pound Cake

Ingredients

For the Cake:

2 1/2 cups (325g) all-purpose flour

1 1/2 teaspoons baking powder

1/2 teaspoon salt

1 1/2 cups (340g) unsalted butter, softened

2 cups (400g) granulated sugar

4 large eggs, room temperature

1 teaspoon vanilla extract

1/2 cup (120ml) whole milk, room temperature

3 tablespoons cocoa powder (for the darkest layer)

2 tablespoons cocoa powder (for the medium layer)

Instructions

Step 1: Prepare the Oven and Pan

Preheat your oven to 350°F (175°C).

Grease and flour a 9x5-inch loaf pan, or line it with parchment paper.

Step 2: Mix the Dry Ingredients

In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.

Step 3: Cream the Butter and Sugar

In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3–5 minutes.

Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.

Step 4: Combine Wet and Dry Ingredients

Add the dry ingredients to the butter mixture in 3 additions, alternating with the milk. Start and finish with the flour mixture. Mix just until combined.

Step 5: Divide the Batter

Divide the batter into three equal portions.

For the darkest layer, sift in 3 tablespoons of cocoa powder to one portion of the batter and stir until fully incorporated.

For the medium layer, sift in 2 tablespoons of cocoa powder to the second portion and mix well.

Leave the third portion of the batter plain for the lightest layer.

Step 6: Layer the Batter

Start by spooning the lightest layer of batter into the prepared loaf pan. Smooth the top with a spatula.

Next, add the medium chocolate layer on top of the light batter. Use the back of a spoon or spatula to gently spread it out.

Finally, top with the darkest chocolate layer. Smooth the top gently.

For a marbled effect, lightly swirl a knife through the layers in the pan to create a subtle ombre effect.

Step 7: Bake

Bake the cake for 55–60 minutes, or until a toothpick inserted into the center comes out clean.

Let the cake cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

Step 8: Optional Glaze or Topping

Chocolate Glaze (optional):

1/2 cup (120ml) heavy cream

1/2 cup (85g) dark chocolate chips

Heat the heavy cream in a small saucepan until it just begins to simmer.

Pour over the chocolate chips and let sit for 3–5 minutes, then stir until smooth.

Drizzle the chocolate glaze over the cooled cake for extra richness.

Serving Suggestions

Serve as is, or with a dollop of whipped cream or vanilla ice cream.
