🍳 Chicken and Rice Skillet 🧄🍃


Ingredients:

🍗 1 lb chicken breasts, cut into bite-sized pieces

🧈 2 tablespoons olive oil or butter

🧅 1 medium onion, diced

🧄 3 cloves garlic, minced

🍚 1 cup long-grain white rice

🍗 2 cups chicken broth

🥕 1 cup diced carrots

🫛 1 cup frozen peas

🌿 1 teaspoon Italian seasoning

🧂 1/2 teaspoon salt

🧂 1/4 teaspoon black pepper

🧀 1/2 cup grated Parmesan cheese (optional)

🌿 Fresh parsley for garnish

Directions:

1️⃣ Cook the Chicken:

Heat olive oil in a large skillet over medium heat. Add the chicken pieces and season with salt and pepper. Cook until lightly browned and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

2️⃣ Sauté the Vegetables:

In the same skillet, add the diced onion and sauté until softened, about 2-3 minutes. Add the garlic and cook for another minute until fragrant.

3️⃣ Cook the Rice:

Add the rice to the skillet and toast for 1-2 minutes, stirring constantly. Pour in the chicken broth, add the carrots, Italian seasoning, and additional salt and pepper. Stir to combine.

4️⃣ Simmer:

Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 15 minutes, or until the rice is cooked and the liquid is absorbed.

5️⃣ Add the Chicken and Peas:

Return the cooked chicken to the skillet and stir in the frozen peas. Cook for an additional 3-5 minutes, until everything is heated through.

6️⃣ Garnish and Serve:

Sprinkle with Parmesan cheese (if using) and garnish with fresh parsley. Serve hot and enjoy!
