Garlic Parmesan Chicken and Potatoes

Ingredients:

4 boneless, skinless chicken breasts

4 large potatoes, cut into 1-inch cubes

1/4 cup olive oil

3 cloves garlic, minced

1 tablespoon fresh parsley, chopped

1 cup grated Parmesan cheese

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 teaspoon dried oregano

Salt and pepper to taste

1/2 teaspoon paprika

1 tablespoon lemon juice (optional, for drizzling)

Directions:

Preheat the oven to 400°F (200°C).

In a large bowl, toss the potato cubes with 2 tablespoons of olive oil, garlic powder, onion powder, paprika, salt, and pepper. Spread the potatoes out in a single layer on a baking sheet.

In a separate bowl, mix together the minced garlic, Parmesan cheese, and remaining 2 tablespoons of olive oil. Season with a pinch of salt and pepper.

Rub the garlic Parmesan mixture evenly over both sides of the chicken breasts.

Place the seasoned chicken breasts on the same baking sheet as the potatoes, making sure the chicken is not overcrowded. You may want to move the potatoes slightly to make room for the chicken.

Bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C) and the potatoes are golden and crispy.
