Mini Cheesecake Danish

Ingredients (makes 8–10 mini danishes)

For the Danish:

1 can (8 oz) crescent roll dough (or puff pastry sheet)

4 oz cream cheese, softened

2 tbsp granulated sugar

½ tsp vanilla extract

1 tsp lemon juice (optional, for tang)

For the Egg Wash:

1 egg, beaten

1 tsp water

For the Glaze (optional but delicious):

½ cup powdered sugar

1–2 tsp milk

¼ tsp vanilla extract

Optional toppings: fresh fruit (blueberries, raspberries, or cherry pie filling)

🍰 Instructions

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Prepare the filling:

In a small bowl, mix cream cheese, sugar, vanilla, and lemon juice until smooth and creamy.

Shape the dough:

If using crescent rolls: unroll and separate into 8 rectangles (press seams together).

If using puff pastry: cut into 8 squares.

Fold up edges slightly to form a “border” (like a tiny tart).

Fill them:

Spoon about 1 tablespoon of the cheesecake mixture into the center of each.

Add a few berries or a teaspoon of fruit filling on top if desired.

Brush & bake:

Brush the edges of the dough with egg wash.

Bake 10–13 minutes, or until golden brown and puffed.

Cool slightly, then drizzle with glaze (mix powdered sugar, milk, and vanilla until smooth).

💡 Tips

Use refrigerated puff pastry for a flakier texture and “bakery look.”

Add a bit of lemon zest to the filling for a brighter flavor.

These taste amazing warm but can be stored in the fridge for up to 3 days. #lemon8baker #bakingideas #sweets
