Ingredients (makes 6–8 pockets)

For the Filling:

1 lb shaved steak (or thinly sliced ribeye, sirloin, or deli roast beef)

1 small onion, diced

1 small green bell pepper, diced (optional)

1 cup mushrooms, sliced (optional)

1 tbsp olive oil or butter

1 tsp garlic powder

Salt & pepper to taste

6–8 slices provolone or white American cheese

For the Pockets:

1 can (8 oz) refrigerated crescent roll dough or 1 sheet puff pastry (thawed)

1 egg (for egg wash)

1 tsp water

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

Cook the filling:

Heat olive oil or butter in a skillet over medium-high heat.

Add onions (and peppers/mushrooms if using). Sauté 3–4 minutes until softened.

Add steak, season with salt, pepper, and garlic powder. Cook until browned, about 4–6 minutes.

Remove from heat and let cool slightly.

Assemble the pockets:

Unroll crescent dough into rectangles (press seams together) or cut puff pastry into 6–8 equal squares.

Place half a slice of cheese on one side of each piece of dough.

Spoon 2–3 tbsp of the steak mixture on top.

Add another half slice of cheese.

Fold dough over to form a pocket and press edges with a fork to seal.

Brush with egg wash:

Whisk egg and water together, then brush over the tops for a golden crust.

Bake:

Bake 12–15 minutes (crescent rolls) or 15–18 minutes (puff pastry) until golden brown and flaky.

Cool slightly before serving — the cheese inside will be hot and gooey!
