Baking the perfect soft chocolate chip scones always feels like a rewarding experience, especially when they come out as tender and fluffy as you hope. One tip that really helped me achieve that soft texture was incorporating cornstarch with the flour to mimic pastry flour, which makes the scones extra delicate without weighing them down. When mixing the dough, it's important to add the lactose-free milk slowly, just until the dough starts to come together, avoiding overmixing that could make the scones tough. I also found that gently pressing the dough into a circle and scoring it before baking ensures even cooking and makes serving easier. Brushing the tops with a little milk gives a golden finish that looks inviting once baked. For the glaze, whisking powdered sugar with vanilla and slowly adding milk until smooth creates that melt-in-your-mouth sweetness that pairs perfectly with the rich chocolate chips. Using lactose-free milk was a game changer for me, especially since it’s suitable for those sensitive to dairy but still contributes to a tender crumb. The chocolate chips inside should be generous – measuring them with your heart, as the recipe suggests, lets you control sweetness and melty chocolate pockets. Making these scones for a special occasion, like an anniversary, adds an emotional touch that makes baking even more enjoyable. They’re also great to share with friends and family as a homemade, comforting treat. Whether you’re a beginner or experienced baker, this recipe’s simple steps and tips ensure satisfying soft chocolate chip scones that are anything but dry or crumbly.
