Doylene's Giblet Gravy

Mom's Giblet Gravy.
Ingredients:
Giblets (from a whole turkey)
4 c. water (cold)
1 stick of butter
2 T. all-purpose flour
1/2 c. milk
1/2 t. salt
1/2 teaspoon ground black pepper
2 or 3 hard-boiled eggs (chopped)
Place the giblets into a saucepan and cover with 4 cups cold water; bring to a boil. Reduce the heat to low and simmer the giblets for about 1 1/2 hours.
Remove the giblets from the pan and set the water aside. Let the giblets cool. Remove the meat from the neck and chop with the rest of the meat.
Melt the butter in a heavy saucepan. Mix the flour, salt, pepper and milk in a glass and add it into heavy sauce pan. Cook and stir for 3 to 5 minutes, or until the roux just barely begins to turn golden. Add in the water left from boiling the giblets. Continue cooking and stirring until thickened.
Place the chopped giblets into the gravy. Taste and season the gravy with salt and ground black pepper.
Add chopped eggs right before serving.
and stir in the flour.
