🧅✨ "Koji onions" Japanese easy fermentation, natural umami flavor, good for the intestines!
We didn't care much about microbes in food before... we studied Japanese fermentation culture and got to know the "Kochi" he used for thousands of years. 🍶
What is 💡 Kochi?
Kochi is a type of Japanese fungus (Aspergillus oryzae) that is cultivated on rice to help digest starch into sugar and create enzymes that are good for the body. The Japanese have used it to make miso soup, shoyu and sake for centuries.
We try to ferment koji with onions according to the recipe made by the Japanese villagers, and it is a kind of umami, sour, slightly salty, fragrant, and can be used instead of a dressing or top on rice. 🍚💕
📌 raw materials:
1. 1 chopped onion
2.Koji Rice (Shio Koji) 2 tablespoons
3. Hand-picked salt
🧑🍳 How to do it:
1. It's easier than this, no more. 😅
2. Add a dozen to ferment for 1-2 days (cool, not exposed to the sun)
3. When you start to smell lightly fermented, you can put it in the fridge.
🌿 Benefits:
• Increased fine microbes in the gut
• Digestive aids
• Balancing the excretory system
• Supplement food flavors without MSG
✨ Let's start taking care of ourselves in the traditional Japanese natural way ~
When eating mixed with the fermented slices, leave enough to be salted, then eat, can add fried rice or fried vegetables.
