Brown Butter Espresso Toffee Chip Cookies 🍪

First make the small batch of toffee by combining butter, salt, and both sugars and cooking over medium heat till your mixture reaches 300 degrees F. Then poor onto parchment lined baking sheet to cool and then shatter for your cookies.

Combine wet ingredients and dry ingredients separately before mixing all together until just combined. Then add chocolate of choice and toffee, stiring until combined.

Refrigerate for 15 min and then scoop dough into 100g balls. Places cookie balls on parchment lined sheet and refrigerate at least a couple hours or overnight.
