Cookies At Midnight: Chocolate Chip Toffee Cookie

Cookies at Midnight started as a way to channel my insomnia and anxiety into something someone, somewhere might enjoy. Somewhere along the way, I ended up creating my perfect chocolate chip cookie—crispy on the edges, soft in the middle, not too thick, a little gooey, full of deep flavor, and absolutely no hard chocolate chips.

Will this cookie cure your mental health? Probably not.

Will it be a delicious way to de-stress? Absolutely.

I give away more than I eat, but the fact that in my chaos I can create something amazing… that’s what heals me. ½ cup butter (softened, melted, or browned butter—your choice)

½ cup brown sugar
