Ingredients (3–4 servings)

• 2 cups cooked red beans (or 1 can, drained & rinsed)

• 2 tbsp oil (sunflower, avocado, or coconut)

• 1 medium onion, finely chopped

• 2–3 garlic cloves, minced

• 1-inch ginger, grated

• 2 medium tomatoes, chopped (or 1 cup canned)

• 1 bell pepper, sliced into strips

• 1 cup okra, trimmed & cut into halves

• 1–2 green chilies, chopped (optional)

• 1 tsp cumin seeds

• 1 tsp turmeric powder

• 1 tsp ground coriander

• 1 tsp garam masala

• 1 tsp chili powder (adjust to taste)

• 1 tsp salt (to taste)

• 1 ½ cups water or vegetable broth

• Fresh cilantro, chopped (for garnish)

Instructions
