🍰 Vegan Ladyfingers (Eggless)
Ingredients
•1/4 cup vegan butter (softened)
•1/3 cup sugar
•1/2 cup vegan buttermilk (oat milk + a splash of ACV, rested 5–10 min)
•1 tsp vanilla extract
•3/4 cup all-purpose flour
•1 tsp baking powder
•1/4 tsp salt
Instructions
1. Prep
•Preheat oven to 350°F
•Line a baking sheet with parchment
2. Cream base
•Beat vegan butter + sugar until light and slightly fluffy (this helps create air since there are no eggs)
3. Add liquids
•Mix in vanilla + vegan buttermilk
•It might look slightly separated—that’s okay
4. Dry ingredients
•In another bowl, whisk flour, baking powder, and salt
5. Combine
•Gently fold dry into wet
•Don’t overmix—stop once combined (batter should be thick but pipeable)
6. Pipe
•Transfer to a piping bag (or ziplock, cut the corner)
•Pipe 3–4 inch lines onto tray, spaced apart
7. Bake
•Bake 10–12 minutes
•Edges should be lightly golden, centers soft
8. Cool
•Let cool completely they firm up as they sit
Vegan Matcha Tiramisu 🍵🌱
Ingredients
•Matcha + warm water (+ agave optional)
•Nasoya organic silken tofu
•2Tbsp Agave + splash of vanilla
•1/4c Plant-based heavy whipping cream (whipped)
•Vegan ladyfingers
Instructions
1. Matcha soak: Whisk matcha + water, let cool
2. Cream: Blend tofu + agave + vanilla until smooth, fold in whipped cream
3. Layer: Dip ladyfingers quickly in matcha → layer with cream (repeat)
4. Chill: 4–6 hrs or overnight
