Dubai Chocolate Covered Strawberries 🍓🍫
Since my fiancé and I have been focusing on eating better this year, I didn’t want to go overboard for Valentine’s Day. This felt like the perfect middle ground - it’s something sweet, simple, and still made with wholesome ingredients!
INGREDIENTS:
- Fresh strawberries, washed and fully dried
- Kataifi (shredded phyllo dough) about 2 cups tightly packed
- 2 tbsp butter
- 1¼ cups pistachio butter (recipe below ⬇️)
- 3 tbsp tahini (optional)
- Milk chocolate for dipping
(I used Lindt milk chocolate bars, but almond bark or melting wafers work too)
DIRECTIONS:
1. Melt butter in a pan over medium heat. Add the kataifi and cook, stirring constantly, until golden brown and crisp. Remove from heat and cool for 5 minutes.
2. Add the toasted kataifi to a bowl. Mix in the pistachio butter and tahini until fully combined.
3. Transfer the mixture to a parchment-lined baking sheet and press firmly into an even layer and place in the freezer until firm.
- This step is not optional
- Freezing gives the mixture structure so it can be molded and will actually stick to the strawberries.
4. Once slightly firm, take the mixture and tightly press it onto each strawberry.
- Press firmly - this takes a little time, but it will stick.
5. Place the filled strawberries back into the freezer while you melt the chocolate.
6. Melt your chocolate, then dip each frozen strawberry to fully coat.
7. Drizzle, decorate, or add any toppings you may like. Let it set, then enjoy!!
HOMEMADE PISTACHIO BUTTER
INGREDIENTS:
- 2 cups raw unsalted pistachios
- ½ tsp salt
- ½ cup powdered sugar
- Up to ½ cup coconut oil, added gradually
DIRECTIONS:
- Add pistachios to a food processor and blend until finely ground.
- Scrape down the sides.
- Add powdered sugar and salt.
- With the processor running, slowly add coconut oil until the mixture reaches your desired thickness and creaminess.
