😋 Salami Cups 😋
These salami cups are such a unique, fun twist to any appetizer spread - you can definitely double this recipe! I highly recommend using a silicone cupcake pan if you’re able! Either way, just make sure you watch the salami in the oven as they can crisp up quickly!
You really can fill these with whatever filling combinations you prefer, but here is how I built mine:
Ingredients:
- 12 slices of deli-sized salami
- 1/2 cup fresh mozzarella pearls
- 1/2 roasted red peppers, chopped or diced (you can usually find roasted red peppers jarred in the condiments/pickles aisle!)
- 1/4 chopped pepperoncini (I bought a jar of sliced pepperoncinis and chopped from there!)
- 6 to 8 medium/large sized fresh basil leaves, ribboned or chopped- to ribbon, stack leaves with largest leaf on the bottom, roll up tightly, and slice thinly (see video)
- Balsamic glaze
- Ground Pepper
Directions:
1. Preheat oven to 400 degrees.
2. In a cupcake pan, lay one slice of deli-sized salami in each section and push down firmly with fingers to create a cup shape. Bake in oven for 6-10 minutes until sides are crispy and cups have formed into place. Time depends on the strength of your oven - keep an eye on them! They will continue to crisp as they cool. When done, let cool.
3. Mix mozzarella pearls, chopped roasted red peppers, chopped pepperoncini, and fresh basil together. Season with ground pepper to liking.
4. Fill cooled salami cups evenly with filling mixture. Top with a drizzle of balsamic glaze.
5. Enjoy!
