This is the kind of dinner I make when I want something that feels a little fancy… but I’m absolutely not doing anything complicated 😋
Chicken piccata meatball and rice bake. Everything goes in uncooked and comes out perfectly cozy, lemony, and so good. Minimal effort, big payoff. My favorite kind of weeknight situation.
Here’s how it comes together:
Ingredients:
* 1 lb ground chicken (I prefer not using breast here… it can make the meatballs a bit firmer. Ground chicken with a little more fat stays more tender, but use what you have!)
* 1/4 cup fresh parsley, finely minced
* 1/2 cup Italian seasoned breadcrumbs
* 3/4 tsp garlic powder
* 1 egg
* 1 cup uncooked white rice
* 2 cups chicken broth
* Juice of 1 lemon
* 1 (5.3 oz) container plain Greek yogurt
* 1 1/2 Tbsp capers + 1/2 Tbsp caper juice
* 1 tsp garlic salt
* 1 1/2 tsp dried Italian seasoning
* 2 handfuls fresh spinach
* 1 cup grated Pecorino Romano, divided:
* 1/2 cup for the meatballs
* 2 Tbsp for the rice layer
* 3 Tbsp for topping
Directions:
1. In a bowl, mix together ground chicken, parsley, breadcrumbs, garlic powder, egg, and 1/2 cup of the grated cheese. Set aside.
2. Spray a casserole dish and add the uncooked rice, chicken broth, lemon juice, Greek yogurt, capers and caper juice, garlic salt, and Italian seasoning. Stir well, breaking up the yogurt as much as possible. It may look a little clumpy at this stage… that’s totally fine. It melts into the sauce as it bakes. Then evenly sprinkle 2 Tbsp of the grated cheese over the top.
3. Add spinach and gently push it down into the liquid.
4. Roll meat mixture into about 12 meatballs (about 2 Tbsp each) and place on top.
5. Cover tightly with foil and bake at 375°F for 40 minutes.
6. Uncover, sprinkle with remaining cheese (about 3 Tbsp), and bake another 5 to 10 minutes until bubbly and cooked through.
That lemony, briny piccata vibe with the creamy rice underneath is so good.
