When it’s too hot to cook, the Crock Pot is your best friend. Saucy barbecue chicken over rice, cool creamy avocado, the crunch of a light and tangy slaw…the freshness in this bowl is everything on a hot day. Finish it with green onion and pickles and it all just goes. Here’s how it comes together:
- BBQ Crockpot chicken cooked your favorite way! It can be as simple as throwing chicken in the crockpot to cook low and slow in your favorite bbq sauce (I like to add a little honey and red wine vinegar for a little extra flavor!)
- White rice (I used microwaveable frozen rice!)
- Thinly sliced avocado finished w/ salt
- Green onion
- Pickle chips (I went with dill but use your fav!)
- Coleslaw. Grab your favorite premade or make the easy recipe below.
COLESLAW: mix the following together. You can even prep this ahead of time!
- 14oz bad a pre-shredded coleslaw mix from the bagged salad section
- 1/4 cup mayo of choice (even vegan, egg-free Mayo works!
- 1/4 plain Greek yogurt (or do 1/2 cup of either if you want to use just one)
- 1 Tbsp + 1 tsp Apple Cider Vinegar
- 1 Tbsp honey
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp pepper
- (After mixing together, salt & pepper to taste)

When the temperature rises and cooking indoors feels unbearable, turning to a Crock Pot meal is a lifesaver. The beauty of this BBQ Crockpot chicken bowl lies in its simplicity and fresh flavors that make it stand out as a summer favorite. Beyond just a recipe, this dish offers a balance of textures and tastes that keep your palate interested. One personal tip I’ve found helpful is to use a homemade BBQ sauce when cooking the chicken low and slow. Adding a splash of honey and a dash of red wine vinegar not only enhances the flavor but also balances sweetness and tang, which pairs beautifully with the creamy avocado slices layered on a bed of fluffy white rice. Using microwaveable frozen rice cuts down prep time significantly without sacrificing taste—a great hack for busy days. The homemade coleslaw in this bowl also deserves a shout-out. Mixing pre-shredded coleslaw mix with a combination of mayo and Greek yogurt delivers creaminess, while apple cider vinegar and honey add a bright and slightly sweet note. Seasoning with garlic powder, salt, and freshly ground pepper at the end brings everything together perfectly. Plus, this slaw can be made a day in advance, allowing the flavors to meld nicely. Don’t overlook the garnish—green onions and dill pickle chips add a fresh crunch and tang that finish the bowl with a delightful contrast. If you want to customize, consider swapping dill pickles for bread-and-butter or spicy pickles to suit your preference. This Crockpot chicken bowl is perfect for those no-cook, no-fuss dinner nights when the heat makes the stove your enemy. What makes it even better is that it is a wholesome, balanced meal combining protein, carbs, fats, and vegetables, ideal for a nutritious summer dinner. Give it a try—the freshness and ease will have you coming back for more during the hottest days!
