These Cold Cut Nacho Bites are such a great snack, appetizer, and way to use up lunchmeat! Here’s how they come together:

Ingredients:

- 15 to 20 @Tostitos Scoops

- 2 slices each of turkey, ham, salami, and provolone cheese (mild or sharp if possible!)

- About 3/4 cup shredded lettuce

- 1.5 Tbsp mayo

- Drizzle red wine vinegar

- Sprinkle dried Italian seasoning or oregano

- Hoagie spread (I usually find it in the condiment aisle or by the deli!) OR chopped banana peppers or pepperoncini - your choice!

Directions:

1. Preheat oven to 375 degrees Fahrenheit

2. Pile up lunch meat and cheese, cut vertically and then horizontally, until all of the lunch meat is in small, even pieces.

3. Place the scoops on a parchment lined cooking sheet and fill with the lunch meat mixture. You want them overflowing.

4. Bake for about 10 minutes or until melty to your liking (you can also make these without baking them - they are SO good cold, too!).

5. While they are baking, mix lettuce, mayo, red wine vinegar, hoagie spread or pepper of choice, and dried Italian seasoning together until fully incorporated. Adjust with each ingredient if necessary- I added a little more hoagie spread to mine!

6. Remove from oven, top with lettuce mixture, and enjoy!

... Read moreCold Cut Nacho Bites are not only versatile but also incredibly easy to customize based on what you have in your fridge. I've found that adding a drizzle of red wine vinegar to the lettuce mix adds a delightful tang that balances the richness of the cheese and meats beautifully. In my experience, using a combination of mild and sharp provolone enhances the flavor layers, making each bite more interesting. You can even experiment with other lunchmeats like roast beef or add a spicy salami to give the bites a kick. If you prefer a crunchy contrast, consider adding some chopped fresh cucumbers or radishes to the lettuce mixture or sprinkling a bit of crushed red pepper flakes over the top after baking. The hoagie spread is a hidden gem here—it brings a tangy, savory note that complements the meats well, but if you can't find it, finely chopped banana peppers or pepperoncini also do a fantastic job of brightening the dish. Making these ahead of time is a time saver and they keep well in the fridge, so they’re perfect for parties or quick snacks throughout the week. I’ve even doubled the recipe when hosting friends, and they always disappear quickly. Whether warm and melty or cold and crisp, these Cold Cut Nacho Bites are a creative way to use up lunchmeat while serving a flavorful, crowd-pleasing appetizer that’s ready in minutes.
