Cajun Chicken Penne Pasta

Chicken and Cajun Alfredo Penne. Cooking in the kitchen: Meal Prep for the hubby’s lunch.

Recipe

Part One - Prep Chicken

Rinse and pat dry 3 chicken breast. Split chicken breasts in half. In a bowl add chicken breast, olive oil, Spice World Moroccan seasoning, paprika and creole seasoning. Rub in all seasoning well.

Sauté each side for 7-8 mins on medium-heat. Timing depends on size of chicken breast.

Part Two - Prep Pasta

I’m using Barilla Penne. Follow directions on the box.

Part Three - Prep Sauce

2 tbsp butter

1 tbsp flour

1 tbsp minced garlic

1 tsp diced pimentos

1 tsp Creole seasoning

1 tsp Italian seasoning

1 tsp Chicken bouillon

1/2 tsp red pepper flakes

1/2 cup green peas

1/2 cup heavy cream

2 cups milk

1/2 cup parmesan cheese

Mix in all seasonings just like in the video.

Add pasta to the sauce. To help stretch… if necessary, add 1 cup of pre-made Alfredo sauce.

Dice chicken breast and mix in with pasta.

Add more parmesan cheese, parsley and red pepper flakes (to your taste).
