Chole Recipe
Ingredients:
• For the Chole:
• 1 cup dried chickpeas (or 2 cans of chickpeas, drained and rinsed)
• 2 tablespoons oil (vegetable or olive oil)
• 1 large onion, finely chopped
• 2 tomatoes, pureed
• 2-3 green chilies, slit (adjust to taste)
• 1 tablespoon ginger-garlic paste
• 1 teaspoon cumin seeds
• 1 teaspoon turmeric powder
• 2 teaspoons coriander powder
• 2 teaspoons cumin powder
• 1 teaspoon garam masala
• 1 teaspoon red chili powder (adjust to taste)
• Salt to taste
• 2-3 cups water (as needed)
• Fresh coriander leaves for garnish
• For the Chole Masala (optional):
• 1-2 tea bags or a small piece of dried tea leaves (for color)
• 1 bay leaf
• 1-2 whole cloves
• 1-2 green cardamom pods
Instructions:
1. Prepare the Chickpeas:
• If using dried chickpeas, soak them in water overnight. Drain and rinse. Cook them in a pressure cooker with enough water for about 3-4 whistles, or until tender. If using canned chickpeas, simply drain and rinse them.
2. Heat Oil:
• In a large pan or pot, heat the oil over medium heat. Add cumin seeds and let them splutter.
3. Sauté Onions:
• Add the finely chopped onions and sauté until they turn golden brown.
4. Add Ginger-Garlic and Green Chilies:
• Stir in the ginger-garlic paste and slit green chilies. Cook for 1-2 minutes until the raw smell disappears.
5. Add Tomato Puree:
• Add the pureed tomatoes and cook until the oil starts to separate from the mixture.
6. Spice it Up:
• Add turmeric powder, coriander powder, cumin powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.
7. Combine Chickpeas:
• Add the cooked chickpeas to the mixture. If using the tea bags or leaves for color, add them at this stage. Pour in 2-3 cups of water, depending on the desired consistency.
8. Simmer:
• Bring to a boil, then reduce the heat and let it simmer for about 15-20 minutes. Stir occasionally and adjust the water if needed.
9. Add Garam Masala:
• In the last few minutes of cooking, add garam masala and mix well. Remove the tea bags or leaves if used.
10. Garnish:
• Garnish with fresh coriander leaves before serving.

Ingredients:
• For the Dough:
• 2 cups all-purpose flour (maida)
• 1/2 cup plain yogurt (curd)
• 1 tablespoon semolina (rava) or wheat flour (optional, for extra crispiness)
• 1 teaspoon sugar
• 1/2 teaspoon baking powder
• 1/2 teaspoon salt
• Water, as needed (about 1/4 cup)
• Oil, for deep frying
Instructions:
1. Prepare the Dough:
• In a large mixing bowl, combine the all-purpose flour, semolina (if using), sugar, baking powder, and salt. Mix well.
• Add the yogurt to the dry ingredients and mix until crumbly.
• Gradually add water, a little at a time, and knead to form a soft and pliable dough. The dough should not be too sticky or too hard.
• Once the dough is ready, cover it with a damp cloth or plastic wrap and let it rest for at least 2 hours. This helps in making the bhature soft and fluffy.
2. Divide the Dough:
• After resting, knead the dough again for a minute. Divide the dough into equal portions (about 8-10 balls).
3. Roll the Bhature:
• Take one dough ball and flatten it slightly. Dust it with a little flour to prevent sticking.
• Roll it out into a circle about 5-6 inches in diameter. Make sure it’s not too thin; it should be about 1/4 inch thick.
4. Heat Oil:
• In a deep frying pan or kadhai, heat enough oil for deep frying over medium heat. To check if the oil is hot enough, drop a small piece of dough into the oil; it should sizzle and rise to the surface.
5. Fry the Bhature:
• Carefully slide the rolled bhature into the hot oil. It should puff up immediately. If it doesn’t, the oil may not be hot enough.
• Gently press the bhature with a slotted spoon to help it puff up. Fry until it turns golden brown on both sides.
• Remove the bhature from the oil and drain on paper towels to remove excess oil.
6. Serve:
