Authentic Chicken Tikka Masala
Marinate Chicken (1+ hour):
1 lb chicken + ½ cup yogurt + 1 tbsp lemon juice
2 tsp garam masala + 1 tsp each (cumin, coriander)
½ tsp each (turmeric, salt) + 2 garlic cloves + 1 tsp ginger
Cook Components:
Rice: 1½ cups basmati + 3 cups water + salt → simmer 15 mins
Chicken: Grill/bake marinated pieces until charred (~15 mins)
Sauce:
Sauté 1 chopped onion + 2 garlic + 1 tsp ginger
Add 1 tbsp tomato paste + 1 cup tomato purée + spices (1 tsp garam masala, 1 tsp cumin, ½ tsp paprika) → simmer 10 mins
Stir in ½ cup cream + cooked chicken → simmer 5 mins
Mint Yogurt:
½ cup yogurt + 1 tbsp mint + 1 tbsp cilantro + ½ tsp lemon + salt
Serve:
Fluffy rice + saucy chicken + yogurt drizzle + fresh cilantro
