Swamp potatoes 🥔
I have seen so many people do their take on the swamp potatoes recipe! I also thought it sounded both delicious and cheap (we are always looking for budget dinners here)! I have modified a base recipe to include a bit more fiber (extra beans) and to make it a bit soupy (extra broth). Here is how I did it!
What you need from the store:
- 🌭 sausage
- 🥔 4 potatoes
- 🥣 1 cup of beef broth
- 🫛 2 cans of green beans
- 🫘 1 can of kidney beans
- 🧈 1 stick of salted butter
- 🧅 1 onion
- 🧄 1/2 clove of garlic
- 🧂 salt, pepper, Italian seasoning, onion/garlic powder, and Cajun seasoning.
What you need to do:
1️⃣. Add the onions and garlic to the bottom of the pot. Season with the salt, pepper, and Cajun seasoning.
2️⃣. Chop those potatoes! You can also use the small golden potatoes and it would taste great. Season with the Cajun seasoning, onion/garlic powder, Italian seasoning, and salt.
3️⃣. Add in the cut sausage, the green beans, kidney beans, and one stick of butter. Pour the beef broth on top.
4️⃣. Let cook for 6 hours on high or 8 hours on low.
5️⃣. Serve and enjoy 😊!
We absolutely loved this dish. As it cooks, it gets a gravy like consistency from the melty potatoes. If you are looking for an easy, cheap, and ultra savory dish, give this one a try!
