This plate is for people who want the benefits of the sardine plate, but don’t actually want sardines. Same intention. Different fish.

After baking, I let the salmon cool and put it in the freezer briefly. Not for storage...just to firm it up. Firmer fish flakes better, holds texture, and mixes more evenly. That matters when you’re turning fish into a spread instead of eating it straight.
