Tomato base:

• 1 (28 oz) can hand-crushed San Marzano tomatoes

• 4 cloves garlic, minced

• 1 tsp Italian seasoning

• ½ tsp salt & pepper

• ½ tsp red pepper flakes (optional)

• ¼ cup parmesan

• 1 tbsp balsamic vinegar

Whipped ricotta:

• 1½ cups ricotta

• 2 tbsp olive oil

• ½ tsp garlic powder

• ¼ cup parmesan

Sauté garlic, add tomatoes and seasonings, then simmer 5-7 minutes. Stir in parmesan. Blend the ricotta ingredients until smooth, layer over the tomato sauce, top with mozzarella (optional), and bake at 400°F for 15-18 minutes. Broil for 1-2 minutes, then finish with fresh basil and olive oil.
