If you are looking for a versatile and budget-friendly meal that doesn't compromise on flavor, tuna cakes are an excellent choice. This recipe embraces flexibility—you can customize it with whatever ingredients you have on hand, whether that’s tuna, canned chicken, salmon, or even a seasoned option like the ones from Martie, an online overstock store offering unique, upscale items at affordable prices. Incorporating vegetables such as celery, carrot, and onion adds texture and nutrition. The choice to sauté these vegetables or use them raw influences the overall flavor and crunch of the cakes, allowing you to tailor the dish to your preferences. Seasoning with garlic powder, onion powder, soy sauce, smoked paprika, honey, and simple salt and pepper creates a balanced flavor profile that complements the protein base well. The binding agent—mayo combined with flour added spoon by spoon—should hold the cakes together without making them dry or doughy, preserving the desired moist texture. Frying the cakes in your choice of oil brings a crispy exterior that contrasts nicely with a tender interior. Serving these tuna cakes alongside a vibrant slaw made from cabbage, lime juice, mayo, sriracha, honey, salt, pepper, and black sesame seeds enhances the dish with freshness, creaminess, tanginess, and a touch of heat. Black sesame seeds add an appealing nutty flavor and a visual garnish.
