The sauce is key in my recipe—using a blend of soy sauce, oyster sauce, a splash of sesame oil, and a pinch of sugar helps create a savory yet slightly sweet profile that coats every strand of noodle. I also add garlic and ginger for an aromatic boost that makes the dish smell and taste authentic. For those new to making lomein, I recommend cooking noodles until just tender but not mushy, and not overcrowding the pan while stir-frying to ensure even cooking and maximum flavor absorption. What makes my Chicken Lomein special is how I sear the chicken quickly on high heat to lock in moisture before tossing it with the other ingredients. This method keeps the meat juicy without drying out. Additionally, fresh vegetables add a nice crunch that contrasts with the soft noodles, making every bite interesting.
