1 teaspoon honey (optional)

Ingredients:

1/4 cup chia seeds

1 cup almond milk (or any milk of choice)

1/2 teaspoon vanilla extract

Toppings: fresh fruit, nuts

Instructions:

In a bowl, mix chia seeds, almond milk, and vanilla extract. Stir well and let sit for 5 minutes, then stir again. Cover and refrigerate overnight. In the morning, stir the pudding and top with fresh fruit and nuts. Enjoy!

Ingredients:

1 whole wheat tortilla

2 eggs, scrambled

1/4 cup black beans, drained and rinsed

1/4 avocado, sliced

2 tablespoons salsa

1 tablespoon shredded cheese

Instructions:

Scramble the eggs in a pan until fully cooked. Lay the tortilla flat and add scrambled eggs, black beans, avocado slices, salsa, and shredded cheese. Fold the sides of the tortilla and roll it up into a burrito. Enjoy!
