Mix:

350 grams warm water

Add and mix:

500 grams all purpose flour

10 grams salt

Let rest for one hour

4 sets of stretch and folds 30 minutes apart

Bulk ferment on the counter

Cold proof in the fridge or bake immediately

Bake for 35 minutes at 450 degrees lid on

Bake 10-15 minutes at 450 degrees lid off
