Natto-Miso Soup (Halal version)

Putting this here before I forget the recipe

Base:

- 1 tbsp bonito stock

- 1 tbsp miso paste

- 1200ml water

Ingredients:

- 1 block Fortune Japanese silken tofu

- 3 shiitake mushrooms

- 1 pack natto

Macros:

Protein - 24g

Carbo - 26g

Fat - 16g

Fibre - about 10g

Total calories - 340kcal

The taste is actually nice, but the smell is quite.. an acquired taste. Idk how to explain it, just smells like fermented soybean I guess, but Japanese.

I wonder if next time we can use Teochew instead 🤔

Also more vegetables would be great? And my Japanese friend said to use kelp as well for the broth but then again I don’t have kelp soooooo

In my experience, using silken tofu creates a smooth, delicate texture that complements the bold fermented taste of natto wonderfully. While the fermented soybean aroma can be a bit challenging at first, it truly grows on you and adds a unique depth to the soup. For those new to natto, a good trick is to mix it well before adding it to your soup, which heightens its stickiness and enhances the flavor release. Adding shiitake mushrooms brings an earthy richness that balances the soup's umami notes perfectly. I once experimented with extra vegetables like chopped spinach and green onions, which not only enriched the flavor but also boosted the nutritional value. If you want to elevate the broth, incorporating kelp (kombu) is recommended by many Japanese cooks as it imparts a subtle mineral essence that builds a complex base. Since kelp can be hard to find, substituting with a light dashi made with dried shiitake mushrooms and bonito flakes works well too, as in the recipe. For halal adaptation, ensure any bonito stock used is certified halal or substitute it with vegetable or mushroom stock to maintain authenticity while meeting dietary guidelines. This soup is not only flavorful but also packs a balance of macros—about 24g protein and 10g fiber per serving—making it ideal for a healthy diet. In terms of variations, some enjoy replacing natto with other fermented soy products from different regions, like Teochew-style fermented soybeans, offering a milder taste. Exploring these alternatives can be a great way to personalize the recipe and adjust the flavor profile to your liking. Overall, natto-miso soup is a versatile dish that offers a pleasant balance of taste, aroma, and nutrition. With some experimentation, anyone can tailor it to their palate while keeping it wholesome and halal-friendly.
