Protein Loaded Sweet Potato

Ingredients (for 2 boats):

• 400g ground beef (beef mince)

• 2 large sweet potatoes

• ½ red onion, diced

• 3 garlic cloves, minced

• A handful of spinach

• 4 tbsp tomato paste

• 100g light mozzarella cheese

• 1 tbsp chili powder

• 2 tbsp paprika

• 2 tbsp Italian mixed herbs

• Olive oil (for cooking)

• Salt & pepper to taste

Instructions:

1. Roast the Sweet Potatoes:

• Preheat oven to 200°C / 400°F.

• Pierce sweet potatoes with a fork and place them on a baking tray.

• Roast for about 45 minutes, or until soft and fork-tender.

2. Cook the Ground Beef Mixture:

• While the potatoes are roasting, heat a drizzle of olive oil in a large pan.

• Add the red onion and cook for 2–3 minutes until softened.

• Add the garlic and cook for 1 minute more.

• Add the ground beef and cook until browned.

• Stir in tomato paste, chili powder, paprika, Italian herbs, salt, and pepper.

• Add the spinach and cook until wilted.

3. Assemble the Sweet Potato Boats:

• Once sweet potatoes are done, let cool slightly. Slice them open lengthwise and gently fluff the inside with a fork.

• Fill each potato with the beef mixture.

• Top with light mozzarella.

4. Melt the Cheese:

• Return stuffed potatoes to the oven for about 5–7 minutes, or until the cheese is melted and bubbly.
