Chicken Mole!!🍗🍲
Ingredients:📝
For the mole:
4 ancho chiles
4 pasilla chiles
2 mulato chiles
1 guajillo chile
1/2 cup peanuts
1/4 cup almonds
1/4 cup sesame seeds
1/4 cup pumpkin seeds
1 piece of cinnamon (approximately 5 cm)
3 cloves
4 garlic cloves
1 onion
2 tomatoes
1/2 corn tortilla (optional, to thicken)
1/2 cup raisins
1 piece of Mexican chocolate (about 40 grams)
3 cups chicken broth (approximately)
1/4 cup oil or butter
Salt to taste
1/2 teaspoon pepper
For the chicken:
1 whole chicken, chopped
1 onion
2 garlic cloves
1 bay leaf
Salt to taste
Preparation:📍
Cook the chicken:
In a large pot, place the chopped chicken with the onion, garlic, and bay leaf. and enough water to cover. Cook over medium heat until the chicken is tender (approximately 45 minutes).
Once cooked, remove the chicken and reserve the broth to use in the mole.
Prepare the mole:
Roast the chiles (ancho, pasilla, mulato, and guajillo) in a pan without oil, taking care not to burn them. Then, remove the seeds and veins from the chiles.
In the same pan, toast the almonds, peanuts, pumpkin seeds, and sesame seeds. Then, toast the garlic cloves, onion, and tomatoes until lightly browned.
Place all these ingredients in a blender or food processor along with the cinnamon, cloves, raisins, tortilla, chocolate, and chicken broth. Blend until smooth.
Cook the mole:
In a large saucepan, heat the oil or lard over medium heat and pour in the blended mixture. Cook for about 10 minutes, stirring constantly to prevent sticking. If the mole is too thick, add more chicken broth until you reach the desired consistency.
Add the cooked chicken (shredded if you prefer) to the mole. Cook everything together for 10-15 minutes so the chicken absorbs the flavors of the mole.
Adjust the flavor:
Adjust the salt and pepper.
Serve:
Serve the chicken mole hot, accompanied by rice and tortillas.
