1 lb (450g) smoked sausage, sliced

2 tablespoons olive oil

1 onion, chopped

3 garlic cloves, minced

1 pound collard greens, stems removed and chopped

2 cups cooked black-eyed peas (or 1 can, drained and rinsed)

4 cups chicken broth

1 teaspoon smoked paprika

1/2 teaspoon crushed red pepper flakes (optional)

Salt and pepper to taste

Hot sauce for serving (optional)

Heat olive oil in a large pot or Dutch oven over medium heat. Add sausage and cook until browned, about 5 minutes. Remove and set aside.

In the same pot, sauté onion and garlic for 2–3 minutes until fragrant and softened.

Add collard greens and cook for 3–4 minutes until slightly wilted.

Stir in black-eyed peas, chicken broth, smoked paprika, and red pepper flakes if using. Bring to a gentle simmer.

Return the sausage to the pot and simmer for 15–20 minutes, stirring occasionally, until the greens are tender and flavors meld together.

Season with salt and pepper to taste. Serve warm with hot sauce if desired.
