Mashed Potato Pancakes with Beef Mince Filling
For the Mashed Potato Dough:📝
500ml cold mashed potatoes
1 large egg
60g all-purpose flour (plus more for dusting)
Salt and pepper to taste
Parsley for garnish
For the Beef Mince Filling:
250g beef mince
1 medium onion, finely chopped
1 clove garlic, minced
1 tablespoon (15ml) olive oil
1 teaspoon (5ml) dried oregano
Salt and pepper to taste
Instructions:📍
1. Prepare the beef mince filling: Heat the olive oil in a pan over medium heat. Add the chopped onion and cook until softened. Add the garlic, beef mince, oregano, salt, and pepper. Cook until the mince is browned, breaking it up with a spoon as it cooks.
2. Prepare the mashed potato dough: Mix the cold mashed potatoes, egg, and flour in a bowl until well combined. Season with salt and pepper to taste.
3. Assemble the pancakes: Divide the potato dough into 6-8 portions. Flatten each portion into a disk. Place a spoonful of the beef mince filling in the center of each disk. Fold the potato dough over the filling and shape into a pancake.
4. Cook the pancakes: Heat a non-stick pan with a little oil over medium heat. Cook the pancakes until golden brown and crispy on both sides. Garnish with fresh parsley.
