... Read moreI've tried this mango flan recipe several times, and one tip I found especially useful is making sure to use fully ripe, sweet Alphonso mangoes—this really enhances the natural sweetness and flavor of the flan. When preparing the caramel, heating the sugar and water mixture slowly on low heat until it turns a deep golden color without stirring too much prevents crystallization and gives a rich caramel base. For the custard mixture, blending all ingredients until very smooth and then straining it makes a restaurant-style flan with a velvety texture. I personally prefer steaming this flan because it creates a tender and moist custard, but baking in a water bath (bain-marie) also works great if you want a firmer texture. After cooking, chilling the flan overnight in the refrigerator is essential for the flavors to meld and the custard to fully set. When unmolding, running a knife gently around the edges ensures a clean release. Garnishing with fresh mango slices adds a refreshing, fruity touch that perfectly complements the caramel flavor. One last tip: avoid overbaking, as the flan should still jiggle slightly in the center when done. This ensures it remains creamy rather than dry. Giving these small steps attention can really raise the quality of this mango caramel custard and impress anyone you serve it to!
