While cooking it at home, one challenge many face is replicating the elusive 'wok hei'—the distinctive charred aroma that comes from cooking food at very high heat in a wok. In my experience, preheating the wok until it’s extremely hot before adding ingredients is crucial. This ensures the noodles cook quickly and get that slight caramelization, enhancing the overall flavor. Another important tip is to avoid overcrowding the wok. Stir-frying in small batches allows the noodles to fry properly rather than steam, which can make the dish soggy. Also, letting the noodles sit in the sauce for a bit helps to caramelize the sugar content in the sauce, creating deeper and richer flavor profiles. I’ve found that household stoves often lack the intense heat of commercial kitchens, but don’t let that discourage you. Use a cast iron or carbon steel wok if possible, as these retain heat better. If you don’t have a wok, a large, heavy skillet can work as an alternative. Pad See Ew typically uses wide rice noodles, Chinese broccoli (kai lan), egg, and a protein like chicken, beef, or tofu. The sauce is simple — a mix of soy sauce, dark soy sauce for sweetness and color, and oyster sauce. Some variations include a touch of sugar and chili for a hint of heat.
