Read moreローゼル(ハイビスカスローゼル)って、赤い部分=「実」だと思っていたんですが、食べたりお茶にしたりするのは基本的に赤い“ガク(がく)”なんですよね。私も最初は迷って、収穫のときに中から出てくる緑色の実を「これも使うの?」と悩みました。結論から言うと、私は緑の実(種)は料理やお茶には入れず、ガクだけを使うのが扱いやすかったです(種取りして保存したい時は別)。 ■収穫のタイミング(育て方の観点) ローゼルは花が終わった後、ガクがふっくらして赤く色づいてきたら収穫の合図。放っておくと繊維っぽくなったり、固くなって下処理が大変になるので、「赤いけどまだ柔らかい」くらいで摘むのが好きです。株が元気なら次々つくので、私は“半分くらい収穫して様子見”がちょうどよかったです。 ■下処理:赤いガクから緑の実を外すコツ 1) ガクの付け根あたりを包丁で少し切る 2) 親指で押し出すと、緑の実(種の部分)がつるっと出ます 3) 赤いガクはさっと洗って水気を切る このひと手間で、ハイビスカスティーの色が澄んだ赤になりやすく、酸味もキレイに出ました。 ■ローゼルの食べ方アイデア(甘酸っぱさを活かす) ・サクラ大根:厚めの銀杏切り大根を塩もみ→ローゼル・酒・砂糖・酢・塩をひと煮立ち→熱いうちに大根へ。袋で漬けると色ムラが少なく、翌日には鮮やかなピンクに。甘酸っぱさが本当にクセになります。 ・ハイビスカスティー:赤いガクをお湯で抽出して、酸味が強い時ははちみつや砂糖を少し。私はレモンを足さなくても十分キュッと酸っぱくなりました。冷やすとさらに色が映えるので、夏はアイスもおすすめです。 ・ローゼル葉:葉は意外と酸味があるので、スープに入れるなら“入れすぎ注意”。鶏ささみ+卵のスープに少量入れると、後味がさっぱりしました。トロミが出ると聞くけど、私は控えめでした。 ■保存のしかた 収穫したガクは傷みやすいので、すぐ使わない分は冷凍しておくと便利。ティー用なら冷凍のままお湯に入れても色が出ました。種を残すなら、緑の実は乾かして翌年用に保存しています。 ローゼルは「育てる→収穫する→食べる(飲む)」までが楽しい植物だなと実感しました。赤いガクの扱いに慣れると、漬け物もお茶も失敗しにくいので、まずはサクラ大根から試すのがいちばん簡単でした。
