My go-to's are always Tan Tan Men or a spicy miso – seriously the best for a cozy night in! But lately, I've been seeing so many amazing ideas for *cold ramen*, and it's got me thinking beyond just soup season. Even if it's not a cold snowy day, a refreshing bowl of cold ramen can be absolutely perfect, especially as we head into warmer months or just when you crave something light yet satisfying. I recently tried making some cold ramen at home, and I was genuinely surprised by how versatile it is! It’s such a fantastic option for a quick lunch or a refreshing dinner, maybe even a perfect meal on a lazy Sunday afternoon. I've been experimenting with different toppings, and I wanted to share some of my favorite discoveries that you absolutely have to try. First up, for proteins, you can't go wrong with shredded chicken breast. It's light, lean, and so easy to prepare. Just boil and shred it, then toss it with a little sesame oil or soy sauce for extra flavor. Another fantastic option is thinly sliced ham or char siu (roast pork) if you can get your hands on it. For a seafood twist, cooked shrimp or even imitation crab sticks (kani kama) add a lovely texture and a touch of sweetness. And of course, a perfectly cooked ajitsuke tamago (marinated soft-boiled egg) is a must for any ramen, hot or cold! The creamy yolk adds so much richness. For my veggie friends, pan-fried tofu or even some seasoned edamame pods are delicious and add a great protein boost. Now, for the veggies – this is where you can really get creative and add a pop of color and crunch! I love using julienned cucumber and shredded carrots for that classic crispness. Some fresh corn kernels add sweetness, and a handful of mixed greens or chopped lettuce makes it feel like a substantial salad. Don't forget cherry tomatoes, halved, for a burst of juicy flavor. Thinly sliced scallions (green onions) are essential for that fresh, aromatic kick, and a sprinkle of toasted nori (seaweed) strips adds a wonderful umami depth. I also love adding some blanched bean sprouts for extra crunch. Beyond the classic toppings, consider a drizzle of chili oil for those who like a bit of heat, or a sprinkle of toasted sesame seeds for an extra nutty flavor. Some people even add mentaiko (spicy pollock roe) for a gourmet touch, though I haven't ventured there yet! The dressing is key for cold ramen. A classic sesame dressing (goma dare) is always a winner – creamy, nutty, and slightly sweet. Alternatively, a lighter soy-vinegar dressing with a hint of ginger and garlic is incredibly refreshing. You can find these pre-made or whip up your own with soy sauce, rice vinegar, a touch of sugar, sesame oil, and a dash of dashi or water. So, whether it's a cozy winter night or a bright Sunday afternoon craving something cool, don't limit your ramen adventures to just hot broth.
