Low Carb Tuna Cucumber boats

Macros for the entire thing: 493 Calories | 76g P | 4g C | 20g F

The ingredients:

1 large can tuna 🐟, drained (255g or 9oz total)

2 boiled eggs 🥚

1 jalapeño, finely diced (optional) 🌶️

1/4 cup finely diced dill pickles 🥒

1/2 small red onion, finely diced 🧅

1 tbsp Dijon mustard

2 tbsp light mayo

1-2 tbsp sriracha or hot sauce

Salt & pepper to taste 🧂

1-2 large English cucumber 🥒

To garnish:

Sesame seeds

Teriyaki sauce

Sriracha

Instructions:

1. Add 1 large can or 2 cans of drained tuna to a mixing bowl.

2. Finely dice half or 1 full jalapeño, the dill pickles, & diced red onion. Toss them in with the tuna.

3. Boil 2 medium eggs for 7.5 mins. Drop them into an ice bath, peel, dice, & add to the bowl for that extra protein boost.

4. Stir in 1 tbsp Dijon mustard, 1.5 to 2 tbsp light mayo, 1 tbsp sriracha or hot sauce, and a pinch of salt & pepper. Mash well with a fork until well combined.

5. Scoop out a large English cucumber and scoop in your tuna.

6. Top it off with some sesame seeds and a drizzle of teriyaki sauce and sriracha sauce.
