🍚 Rice:
- 1 pack microwavable white rice (Jasmine or Basmati recommended)
🌶️ Chili Mayo:
- 2 tablespoons Kewpie mayo
- 1 tablespoon Lao Gan Ma Fried Chili Crisp
HOW TO MAKE IT:
1. Prepare the salmon bites:
In a bowl, toss cubed salmon with olive oil, smoked paprika, garlic powder, onion powder, cayenne, black pepper, and salt. Preheat the air fryer to 400°F (200°C). Arrange salmon cubes in a single layer in the air fryer basket. Cook for 7 to 10 minutes, shaking halfway through. While the salmon cooks, mix honey, soy sauce, and minced garlic in a small bowl. When the salmon is done, toss it in the honey garlic mixture and return to the air fryer for 1 to 2 minutes for caramelization.
2. Stir-fry the vegetables:
Heat olive oil in a pan over medium heat. Add minced garlic and sauté for 30 seconds until fragrant. Add broccoli and bell peppers, stir-frying for 3 to 5 minutes until slightly tender but still crisp. Add soy sauce and black pepper, tossing for another minute. Remove from heat.
3. Sauté the garlic spinach:
Heat oil in a small pan over medium heat. Add garlic and sauté for 30 seconds until fragrant. Add spinach and cook for 1 to 2 minutes until wilted. Season with salt and remove from heat.
4. Prepare the 2-step chili mayo:
In a small bowl, mix Kewpie mayo with Lao Gan Ma Fried Chili Crisp until well combined.
5. Heat the rice: Microwave white rice according to package instructions, usually 60 to 90 seconds.
6. Assemble the bowl:
Start with a base of microwaved white rice. Add the garlic spinach and stir-fried vegetables. Top with blackened honey garlic salmon bites. Drizzle or serve chili mayo on the side for dipping.
