* 2 tbsp flaxseed meal
* 1 tsp ground cinnamon
* 1/2 tsp ground ginger
* 1/2 cup vegan butter, sliced, cold

A vegan peach crisp is not only a delightful dessert but also a wholesome way to enjoy fresh seasonal peaches. The combination of spices such as cinnamon and ginger adds warmth and depth to the sweetness of the peaches, making it perfect for various occasions from casual family dinners to festive gatherings. Using flaxseed meal in the topping acts as a natural binder and adds omega-3 fatty acids, boosting the nutritional value while keeping the recipe strictly plant-based. The choice of whole wheat flour or gluten-free alternatives makes this crisp adaptable to different dietary needs, accommodating gluten sensitivities without sacrificing texture or flavor. Peaches are rich in vitamins A and C, antioxidants, and fiber, supporting digestive health and immune function. By baking them with a maple syrup and lemon juice mixture, the peaches caramelize beautifully, enhancing their natural sweetness while the lemon juice balances the flavors and keeps the filling bright and fresh. The oat and pecan topping provides a satisfying crunch and a nutty aroma that complements the soft, juicy filling. Pecans contribute healthy fats and additional protein, making the dessert more filling and nutritious. For best results, selecting ripe but firm peaches ensures the filling holds its shape during baking while releasing enough juice to create a luscious base. Letting the crisp cool for 10 minutes after baking allows the topping to firm up and makes serving easier. This vegan peach crisp can be enjoyed on its own or paired with plant-based vanilla ice cream or coconut whipped cream for an indulgent treat. It also freezes well, so you can prepare it ahead of time or preserve summertime flavors for months to come. In summary, this recipe celebrates the versatility of peaches in vegan baking and offers a healthy, easy-to-make dessert option that doesn’t compromise on taste or texture. It’s an excellent choice for anyone looking to enjoy plant-based sweets that are flavorful, nutritious, and satisfying.
