From personal experience, one of the most important lessons I've learned is that patience is key — rushing the process often leads to uneven cooking or a steak that sticks to your pan. Using a heavy cast iron skillet is essential as it retains heat exceptionally well, ensuring a consistent and high temperature that promotes the Maillard reaction — the chemical process that forms the delicious browned crust on your steak. Before adding your steak, preheat your pan thoroughly until it is smoking slightly. This intense heat helps create that irresistible sear. Additionally, make sure your steak is dry by patting it with a paper towel before seasoning. Moisture can prevent proper searing and steam the meat instead. Once you place the steak in the pan, avoid the temptation to move it around. Let the pan do its job and develop a crust. Flipping too early or frequently can disrupt this. An important tip is not to overcrowd your pan. Cooking just one or two steaks at a time helps maintain the pan temperature needed for a perfect sear. If you notice your steak is not searing like it should, it’s usually a sign the pan needs more heat or the steak’s surface is too wet. Finally, after searing both sides, finish cooking the steak to your desired doneness by lowering the heat or transferring it to an oven.
